  1. Heat oven to 350°
  2. In a large skillet,cook beef and onions until onions are soft and meat is cooked through. Drain and return to skillet.
  3. Stir in Rotel, sour cream, olives, taco seasoning, and beans.
  4. Simmer over medium heat for 10 minutes
  5. Coarsely crush half the chips into a 10x14" casserole dish.
  6. Spoon half the meat mixture over chips.
  7. Sprinkle half the cheese over the meat.
  8. Repeat chip and meat layers.
  9. Bake 20-25 minutes, until heated through.
  10. Top with remaining cheese and bake 5 more minutes, until cheese is melted.
