- Go back to the dough and divide it up for the pasta machine. Or, roll it out and cut it if you don’t have one.
- Toss pasta in the pesto, top with meat and vegetables and a sprinkle of cheese.
Heat the oil in a non-stick fry pan over medium heat. Place the pasta in a large bowl and add the pesto and chicken and gently toss to coat. Season with salt and pepper as desired. Drain and reserve ¼ cup of the pasta water. Thinly slice the chicken breast, then heat the oil in a large frying pan, add the chicken and fry until cooked and brown on both sides.
