It originates from the East African Coast with influence from the Indian cuisine..men, but as with all popular dishes the recipe changes to accommodate differing palates, this is an authentic recipe from my friend who lives in Mombasa and makes my favourite form of kuku paka. This east African dish is one of the easiest "curries" you could ever make.

The ingredients needed to make Kuku paka:
  1. Get mince ginger
  2. Take mince garlic
  3. Take mince green chillies
  4. Make ready diced chicken
  5. Make ready turmeric powder
  6. Make ready coconut milk
  7. Make ready sweetcorn
  8. Make ready oil
  9. Make ready lemon(juice)

Steps to make Kuku paka:
  1. Stir minced ginger, garlic, chilli in oil till fragrant
  2. Add diced chicken (or you can use chicken on bone). Add 2 tsp turmeric so chicken is yellow.
  3. Simmer till chicken is cooked and add coconut milk, sweetcorn.
  4. Boil it for another 5-10 mins. Turn off the stove. - Add coriander leaves and lemon juice - Enjoy!
